Vietnamese Salad Recipe

Every one of us knows about the terrible hunger that strikes your stomach right after a two hour session. You never know how hungry you are until you slow down from all the fun you’re having ripping it up. Then you realize that the hunger monster within you begins to emerge. From then no choice: get something to eat as fast as you can!

For the lucky ones who still live at their mom’s, a quick phone call will ensure a “hot-steaming-delicious” meal ready for them when they get back. For all the others, and this includes most of us here at DYLA, we got a few choices:

  • run in the first fast-food and order a bunch of burritos
  • try transcendental meditation to forget about this pain in the belly
  • cook something

But how can we get a decent meal ready in a sufficiently short amount of time, so that our stomach doesn’t start flipping out? Make a salad!

This Vietnamese salad is prepared in less than 10 minutes and will simply load you up with pure veggies’ and restore your energy. Plus it tastes delicious and as soon as you try it, we’re pretty sure you will put it in your top favorite dishes.

What you’ll need in the salad for two servings:

  • Lettuce hearts
  • 1 sliced tomato
  • 1 grated carrot
  • 1 sliced onion
  • 3 slices of bananas
  • A few blended peanuts
  • Chopped cilantro
  • ½ pound of canned tuna

What you’ll need for the dressing:

  • Half a lemon, squeezed
  • Half a clove of garlic, crushed
  • 1 tablespoon soy sauce
  • 1 tablespoon oil
  • 2 tablespoons water
  • 1 pinch powder sugar
  • 1 pinch salt
  • 1 pinch red pepper

Preparation:
Place the lettuce hearts in a plate. Garnish with all the other veggies and finish by adding the chicken and cilantro.
Put all ingredients for the dressing in a cup and mix. Pour just before eating.
